Chinese Chicken and Rice

 

  I did a stir fry before that is somewhat similar to this but this time I added hoisin sauce as a main part of the sauce. I love making Chinese food and playing with the flavors we have. My sauces typically come out pretty well but almost never the same.  This time it was a new flavor but very good. I will give amounts but take them lightly and adjust everything to your liking as you go.  This does have a sweeter note to it, if you want to add more crushed pepper that would raise the heat level up and balance out the sweetness, I liked it being sweet.

Ingredients:
1 pound of chicken (about 5 tenders)
4 cooked cups of rice
4 tbsp Soy sauce
3 tbsp Sweet chili sauce
5 tbsp Hoisin sauce
1 tbsp Onion powder
1 tbsp Garlic powder
2 tbsp Ginger powder
Sprinkle of Crushed red pepper
To taste Salt and pepper
2 tsp oil

Directions:  
Cut the chicken into chunks


Cook the rice ..we have a rice cooker which I just love we use it at least once a week.
Mix all ingredients for sauce tasting as you go


Heat oil in a wok or skillet until hot

Add chicken and cook until done all the way

When the meat is cooked pour in a little more than half of your sauce (make sure to stir it right before to make sure all the thick sauces are mixed in well) let it cook and boil down a bit. Make sure the meat is coated well.


Dump in the rice and mix it all up. When it’s mixed in add the rest of the sauce on top. Mix it up again.
Let the rice cook a bit with the sauce.


Serve up with some dumplings.
