Weekend Recap

   Hey guys I hope you are having a great Labor Day weekend, we sure are. Hubby got a half day Friday which is always great and a three day weekend to top it off, got to love big companies. Saturday was the start to the Razorback football season, and Sunday was a day of rest,  today well it may be another day of rest ;).

   Saturday was nice, Hubby got up with the dog and let me sleep in all the way to 8:30, I’m not sure if it’s a good thing I count that as sleeping in, but I’ll just say that was a good start to my day.  Then we got salsa made for the game. The Pioneer Woman sure knows how to make a mean salsa!!  The kick off was at 3 and we had a room full of people over to root on our hogs. Well the first half of the game was good we were holding our own and tied going into half time.. that’s pretty big for us. Then the 3rd quarter started and Auburn decided to bring their A game and we brought our C game and didn’t do much of anything while they scored another 24 points. Needless to say we lost our first game but that’s ok because true Hog fans will watch no matter what, even while we are getting our butts beat.
   Sunday we had a great day of rest after church that involved watching Indiana Jones, playing with the dog, and laying on the couch.
   Today’s plan is about the same as yesterdays but maybe with some stakes and corn. Or even a trip to town to shop.

Restaurant Style Salsa

Ingredients
§  1 can (28 Ounce) Whole Tomatoes With Juice
§  2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
§  1/4 cup Chopped Onion
§  1 clove Garlic, Minced
§  1 whole Jalapeno, Quartered And Sliced Thin
§  1/4 teaspoon Sugar
§  1/4 teaspoon Salt
§  1/4 teaspoon Ground Cumin
§  1/2 cup Cilantro (more To Taste!)
§  1/2 whole Lime Juice

Preparation Instructions
Note: this is a very large batch. Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like---I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

This only gets better as it sits in the refrigerator.
