Spanish Bruschetta

When I think of bruschetta I think toasted bread, a tomato slice, basil, and mozzarella. The Spanish has another take on it and it's just as delicious. Most versions that I found simply rub toasted bread with the tomato flesh to soften it and serve with other dishes. I did a slightly different version that is also common. A fresh baguette, fresh tomatoes and garlic are all you need for this delicious appetizer.



Spanish Bruschetta

Ingredients:

French Baguette
2 roma tomatoes
2 gloves of garlic
salt to taste

Directions:

Slice baguette into 1-inch pieces. Toast at 400 degrees F for 10 minutes until golden. 
Halve tomatoes and place into food processor or blender. Dice garlic and add into blender.
Add in salt. Pulse until the tomato is in small pieces but not pulverized. 
Scope tomato mixture onto toast and serve. 

If you wanted you could add some manchego cheese or a bit of goat cheese to the bread for added flavor.

Crock Pot Chicken Taco Chili


Easy crock pot chicken chili, with taco flavors and corn and beans. A great #healthy #weeknight dinner.


   I typically don’t make chicken in the crock pot, I tried when we first got married and it turned out dry and one time burnt. I thought it was the crock pot, but it made everything else perfectly, so I decided no more chicken in there. But when I saw this recipe and the blogger said that hers is normally dry as well and this one was moist and perfect, I decided to go for it. I am so glad I did because it is amazing and on our list to make often.

Lava Cakes for Two

   I have always thought that lava cakes were difficult to make, but I decided I would attempt them for our anniversary last weekend. It turns out they are actually really easy! These turned out delicious and only took about 20 minutes.

   This dessert looks fancy and is a great addition to any dessert table. The secret though is that it is one of the simplest desserts to make! It will look like you slaved away on it, but it only takes just a little bit to make!

Zeppole- Fried Italian Dessert

   Hey guys as promised I am going to share the Zeppole recipe that I made for our Italian meal the other week. These are basically a fried donut that is light and fluffy, coat in sugar or cinnamon sugar or even powdered sugar and they are to die for. This is such an easy batter/dough it looks a little funny but works so well. I googled Italian desserts and came across a video of this elderly Italian grandma making these and you know that means they are going to be perfect, I did not change them much so I will link to the video at the bottom of this page.

Weekend Recap- Cinnamon Roll Recipe


   I hope everyone had a great weekend, I did! The In-Laws came over for the first time and got to see our town, then I took a trip home to go to a baby shower to honor some close family friends. It was an eventful weekend and I am still recovering from all the driving.

   Friday evening Hubby’s wonderful parents came down and spent the night we had so much fun. Hubby made some of the best stakes ever and grilled some awesome asparagus that we all loved. We took them on a tour of the town and even hit up a farmers market that I had no idea was there and I can’t wait to make it a regular stop on the weekend. Saturday morning I made homemade cinnamon rolls that turned out soooo stinking good I just have to share them with you.  First though read what I else I did this weekend.
