We have been trying to eat breakfast more regularly and the
best way we found to make sure we do this is to make them ahead and have them
ready to go. A delicious recipe that we love to make to do this is breakfast burritos,
and they are quick to prep for a whole week.
What you’ll need (makes 8 burritos)
- 1 pack Burrito size tortillas
- ½ pack of ground Sausage- we used sage
- 1 cup of cheddar cheese
- 4 eggs
- 1 potato- shredded
Cook the sausage until nice and brown.
Shred the potato and
fry in a little oil until done.
Scramble
eggs with salt and pepper.
Take a tortilla and layer in sausage, egg, potato, and cheese. Roll up your burrito, ends in and then the sides. Place all on a cookie sheet unwrapped and place in the freezer for 30 minutes.
After 30 minutes roll each one individually in plastic
wrap, then place in a zip-lock baggie and put in the freezer.
To warm up place
in microwave for 30 seconds see if it is warm to the touch, if not do another
30 seconds at a time until hot.
